2 lbs Brussels sprout ends trimmed and sliced in half

On medium high heat, brown bacon in 12-inch skillet until it’s brown and crispy. Take the bacon out with slotted spoon and put onto a plate covered with a paper towel. Place the onions into the pan with bacon grease and salt generously. Cook until translucent about 10- 12 mins and then add garlic. Cook for 1 minute. Add 1/2 cup beef broth and scrape all the brown bits off pan. Add the Brussels sprout and mix; cover the pan, checking every so often and stirring each time. They will take about 20 minutes until softened and browned. You may need to add some more beef stock to the pan as they cook to get brown bits of flavor off pan. Add more salt and pepper to taste. Add bacon back in and stir. Serve.
