Blood Orange Chickpea Salad
  • 2- 15 oz cans of Chickpeas drained and rinsed
  • 1/3 cup minced red onion
  • 3 tbsp chopped cilantro
  • 1 clove garlic minced
  • 1 blood orange juiced (or regular orange)
  • ½ tsp cumin
  • Salt and pepper to taste
  • 5 ozs baby arugula

Mix together all ingredients in a bowl and let sit in the refrigerator for at least 4 hours to let flavors come together. Serve cold or room temperature on a bed of arugula.
