Cherry Currant Bread
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp kosher salt
  • 1/4 tsp baking soda
  • zest from 1 lemon
  • 2 large eggs
  • 1 cup milk
  • 1 cup sugar
  • 1/3 cup canola oil
  • 1 tsp vanilla extract
  • 1/2 cup chopped dried cherries
  • 1/2 cup currants
  • 1/2 cup chopped walnuts

Preheat oven to 350°. Spray a 9×5 inch loaf pan with cooking spray and set aside. In large mixing bowl combine the first 5 ingredients through zest. Place next five ingredients through vanilla extract into the blender and mix until smooth. Pour the wet mixture into the dry mixture until moistened. Then fold in the cherries, currants, walnuts. Spoon into loaf pan and bake for about 50 minutes to 1 hour or until knife inserted comes out clean. Cool on wire rack 20 minutes. Serves 8-10 people. Recipe inspired from Vitamix.
