Gingery Cilantro Dip
small bunches of cilantro, thick stems discarded
cup peeled and sliced ginger
cup canola oil
1/4 cup mayo or sour cream
tbsp rice vinegar
tbsp low-sodium soy sauce
tsp sesame oil
In a blender or Vitamix, puree cilantro, ginger, canola oil, rice vinegar, low-sodium soy sauce, and sesame oil. Serve with roasted shrimp.
