Muffelatta Egg Muffin
  • 1 package English muffins
  • 1 jar of muffuletta olive mix
  • 6 fried eggs with yolks semi-soft
  • 6 slices of hard salami
  • 6 slices of prosciutto
  • 6 slices of provolone cheese

Slice the English muffins in half. Coat each side with some olive mixture. Then stack the egg, meats, and cheese on top of the bottom half. Press on the top half of the sandwich and cut in half. Stick a festive pick in them and serve on a platter. Makes 12 half sandwiches.
