One Skillet Sausage-Veggie Frittata
  • 3 large eggs
  • 7 egg whites
  • ½ tsp of freshly ground pepper
  • 1 tbsp olive oil
  • ½ lb of chicken sausage out of casing
  • 1 cup chopped white onion
  • BIG pinch of salt
  • 12 spears of asparagus trimmed and cut into thirds
  • ½ of a zucchini sliced thin and cut in half
  • ¼ cup crumbled goat cheese

Preheat oven to 425°. Beat the eggs together in a large bowl and add ½ teaspoon of freshly ground pepper and set aside. Add olive oil to a 12 inch stainless steel oven proof skillet. Add the sausage and crumble while cooking for 5 minutes. Add the chopped onion and a BIG pinch of salt (sausage will not be completely cooked yet) and cook for 5 minutes. Then add the asparagus and zucchini and cook for 10 minutes stirring occasionally. Make sure the meat/veggie mixture is spread evenly over the span of the pan and then pour in the egg mixture. Let set for 2 minutes and sprinkle on the goat cheese evenly over the top. Place pan into the preheated oven for 15 minutes or until firm in the middle and puffed up. Serve immediately. (Although this is very good room temperature as well)
