Prepare six salad plates with some arugula. Cut both ends off all three oranges and then cut down the sides taking off the skin. Then turn them on their side and slice into rounds. Arrange on top of salad. Then sprinkle on red onion, walnuts, cranberries and goat cheese. Drizzle with balsamic and crack some fresh pepper over each salad. Serve immediately or store in the refrigerator with plastic wrap covering plate until ready to serve.
