Spicy Lamb Chili
  • 2 lbs ground lamb
  • 1 medium Vidalia onion chopped
  • 1 red pepper chopped
  • 1 green pepper chopped
  • 3 cloves garlic minced
  • 4 tbsp chili powder
  • 1 tsp red pepper flakes
  • 1 tsp cumin
  • 1/2 tsp cinnamon
  • 1/2 tsp allspice
  • 1/2 tsp chipotle powder
  • salt and pepper to taste
  • 1 square of dark chocolate 0.3 ounces
  • 1- 14.5 oz canned diced tomatoes
  • 1 to 1 ½ cans of water

Over medium-high heat, brown lamb meat in heavy bottomed pan {Dutch-oven} and then remove meat and drain fat. Add onions and peppers and some salt and cook until softened about 7-10 minutes. Add garlic and all of the spices including salt and pepper and stir (it will seem pasty). Then add the tomatoes with their juice and the needed water. (Start with a half of can) Add the dark chocolate and stir until melted. Add the lamb meat back in and bring to a boil. Simmer on low for 1 hour.
